A hen soup with tasty cheddar and sage dumplings!

components
    For the hen soup:
  • 2 tablespoons butter
  • 1 cup onion, diced
  • 1 cup carrot, diced
  • 1 cup celery, diced
  • 2 tablespoons butter
  • 2 tablespoons garlic, chopped
  • 2 teaspoons sage, chopped (or 1 teaspoon dried)
  • 2 teaspoons rosemary, chopped (or 1 teaspoon dried)
  • 2 teaspoons thyme, chopped (or 1 teaspoon dried)
  • 3 tablespoon flour (gluten-free for gluten-free)
  • 6 cups hen broth (hyperlink)
  • 1 pound boneless and skinless hen breasts or thighs
  • 1/2 cup heavy/whipping cream (elective)
  • 1/4 cup parmigiano reggiano (parmesan cheese), grated (elective)
  • 1 cup peas (recent or frozen)
  • salt and pepper to style
  • 1 tablespoon parsley, chopped (elective)
  • For the dumplings:
  • 1 1/2 cups all-purpose flour (gluten-free for gluten-free)
  • 1 tablespoon baking powder
  • pepper to style
  • 1 tablespoon chopped recent sage
  • 1 cup cheddar cheese, shredded
  • 3/4 cup buttermilk
instructions
    For the hen soup:
  1. Soften the butter in a big saucepan over medium warmth, add the onion, carrot, and celery, and prepare dinner till tender, about 10-Quarter-hour.
  2. Add the butter, let it soften, add the garlic, sage, rosemary, thyme, sprinkle within the flour, combine and prepare dinner for a minute.
  3. Add the broth and hen, convey to a boil, scale back the warmth and simmer till the hen is cooked by, about 20-Half-hour.
  4. Take away the hen, shred/pull or slice it and return it to the soup.
  5. Add the cream and parmesan, combine and let the cheese soften into the sauce, earlier than mixing within the peas.
  6. Add the dumplings, 1 tablespoon at a time, cowl and prepare dinner for Quarter-hour
  7. For the dumplings:
  8. Combine the flour, baking powder and pepper.

Choice: Garnish with recent chopped parsley.
