Grinder Pasta Salad

The entire flavours of a grinder sandwich in a creamy pasta salad!

components
    For the salad:
  • 1 pound pasta (gluten-free for gluten-free)
  • 2 cups lettuce, shredded or sliced
  • 1 cup tomato, diced
  • 1/4 cup pink onion, sliced
  • 1/4 cup pepperoncini, sliced
  • 1/2 cup provolone, chopped
  • 1/2 cup salami, chopped
  • 1/2 cup pepperoni, chopped
  • For the dressing:
  • 1/3 cup mayonnaise
  • 1 tablespoon pink wine vinegar
  • 1 teaspoon oregano (or Italian seasoning (hyperlink))
  • 1 small clove garlic, minced/grated
  • 2 tablespoons parmigiano reggiano (parmesan), grated
  • 1/2 teaspoon pink pepper flakes (elective)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
instructions
  1. Prepare dinner the pasta as directed on the package deal, drain and rinse in chilly water till the pasta has cooled.
  2. Assemble the salad, toss with the dressing and luxuriate in!
  3. For the dressing:
  4. Combine every thing nicely.

Choice: Use your favorite salad/grinder components!
Choice: Add 1-2 tablespoons of the pickling juice from the pepperoncini jar!
