A tasty quinoa bowl with Greek type hen, tomatoes, cucumbers, olives, feta and tzatziki!

    For the marinade/dressing:
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 4 cloves garlic, minced/grated
  • 1 teaspoon oregano
  • 1/2 teaspoon (smoked) paprika (non-obligatory)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • For the hen:
  • 1 pound boneless and skinless hen breast or thigh, minimize into chunk sized items
  • For the quinoa bowl:
  • 1 cup quinoa (or rice)
  • 2 cups water (or hen broth (hyperlink))
  • 1 cup tomato, diced
  • 1 cup cucumber, diced
  • 1/4 cup crimson onion, diced
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup feta, crumbled
  • 1/2 cup tzatziki sauce (hyperlink)

  1. Combine every thing nicely.

  5. For the quinoa bowl:
