Butternut Squash Chowder

A fall themed creamy chowder with butternut squash, Italian turkey sausage and corn with white cheddar melted into the broth!

elements
  • 1 tablespoon oil
  • 1 pound (recent) (turkey) italian sausage, casings eliminated
  • 1 tablespoon butter
  • 1 onion, diced
  • 4 cloves garlic, chopped
  • 1 tablespoon sage, chopped
  • 1 teaspoon pink pepper flakes (optionally available)
  • 1/4 cup flour (gluten-free for gluten-free)
  • 4 cups vegetable broth (hyperlink) (or rooster broth (hyperlink))
  • 4 cups butternut squashed, lower into 1 inch cubes
  • 1/2 cup heavy cream (or 1/2 cup bitter cream or 4 ounces cream cheese)
  • 1 cup white cheddar cheese, shredded (optionally available)
  • 2 cups corn (recent or frozen)
  • salt and pepper to style
instructions
  1. Warmth the oil in a big saucepan over medium-high warmth, add the sausage and prepare dinner, breaking it aside because it cooks, earlier than setting apart.
  2. Add the butter, let it soften.
  3. Add the onion and prepare dinner till tender, about 5 minutes.
  4. Add the garlic, sage, pink pepper flakes, flour, combine nicely and prepare dinner till aromatic, a few minute.
  5. Add the broth, butternut squash, and sausage, convey to a boil, scale back the warmth and simmer till the squash is tender, about 20 minutes.
  6. Flip off the warmth, combine within the cream and cheese and let it soften into the sauce.
  7. Combine within the corn.
  8. Season with salt and pepper to style and revel in!

Choice: Add 1 cup celery, diced, together with the onion.
Choice: Add 1 cup carrots, diced, together with the onion.
Choice: Add 1 cup butternut squash puree (hyperlink) or pumpkin puree (hyperlink).
Choice: Add 2 cups potatoes, peeled and diced.
Choice: Add 1 (15 ounce) can white kidney beans, drained and rinsed.
Choice: Add 1 teaspoon rosemary, chopped, together with the garlic.
Choice: Add 1 teaspoon thyme, chopped, together with the garlic.
Choice: Add 1/2 teaspoon smoked paprika together with the garlic.
Choice: Add bacon! Cook dinner first, put aside and add again later!
