BBQ Hen Stuffed Zucchini

Zucchini ‘boats’ filled with BBQ hen, onions, peppers, and corn, topped with loads of melted cheese!

components
  • 4 medium zucchini
  • 1 tablespoon oil
  • 1/2 pound hen, lower into small items
  • 1/2 cup pink onion, diced
  • 1/2 cup pink bell pepper, diced
  • 1/2 cup corn (contemporary or thawed)
  • 1/4 cup sizzling peppers, sliced or chopped (non-obligatory)
  • 1/4 cup BBQ sauce
  • 1 cup cheese (cheddar and/or monterey jack), shredded
  • 1 tablespoon cilantro, chopped (non-obligatory)
instructions
