
BBQ Hen Stuffed Zucchini

Zucchini ‘boats’ filled with BBQ hen, onions, peppers, and corn, topped with loads of melted cheese!

- 4 medium zucchini
- 1 tablespoon oil
- 1/2 pound hen, lower into small items
- 1/2 cup pink onion, diced
- 1/2 cup pink bell pepper, diced
- 1/2 cup corn (contemporary or thawed)
- 1/4 cup sizzling peppers, sliced or chopped (non-obligatory)
- 1/4 cup BBQ sauce
- 1 cup cheese (cheddar and/or monterey jack), shredded
- 1 tablespoon cilantro, chopped (non-obligatory)
instructions
- Reduce the zucchini in half lengthwise, and hole them out (utilizing a spoon or melon baller) till the zucchini is about 1/4 inch thick, reserving and chopping the zucchini from the within.
- Warmth the oil in a big pan over medium warmth, add the hen and cook dinner, about 6-8 minutes.
