A crunchy and vibrant salad with satay rooster and crispy rice!

  • 2 cups cooked rice (1 cup raw), cooled
  • 1 tablespoon soy sauce (gluten-free for gluten-free)
  • 1 tablespoon chili crisp
  • 1 teaspoon toasted sesame oil
  • For the skillet rooster satay:
  • 1 pound boneless skinless rooster breast, minimize into chew sized items
  • 2 teaspoons floor coriander
  • 2 teaspoons floor cumin
  • 1 teaspoon turmeric, floor
  • 1 shallot, finely diced
  • 1 tablespoon garlic, minced/grated
  • 1 tablespoon ginger, minced/grated
  • 1 tablespoon lemon zest (from 1 lemon)
  • 1 lime (juice and zest)
  • 2 tablespoons fish sauce (or soy sauce) (gluten-free for gluten-free)
  • 2 tablespoons palm sugar (or brown sugar)
  • 1 tablespoon of sriracha
  • 1 tablespoon oil
  • For the peanut dressing:
  • 1/4 cup peanut butter
  • 2 tablespoons rice vinegar
  • 2 tablespoons lime juice
  • 2 tablespoons palm sugar (or brown sugar or maple syrup)
  • 1 tablespoon garlic, minced/grated
  • 1 tablespoon ginger, minced/grated
  • 1 tablespoon fish sauce (or soy sauce) (gluten-free for gluten-free)
  • 1 tablespoon sriracha
  • 1 teaspoon toasted sesame oil
  • For the salad:
  • 2 cups purple cabbage, sliced
  • 1 cup cucumber, sliced
  • 1 cup edamame
  • 1 cup carrot, shredded
  • 1/4 cup cilantro, chopped
  • 1/4 cup mint, chopped
  • 4 inexperienced onions, sliced
  • 1/4 cup roasted peanuts, chopped

    For the crispy chili rice:
